  • Tasmanian ½ shell scallops, pumpkin seed and citrus crust
  • Shallow fried calamari, 'cauliflower giardiniera', tartare foam
  • 'Melanzane Calabrese'
  • Tartare of wagyu beef, porcini acid, smoked tomato, pine nut oil
  • 'Salsicce al marsala' white polenta
